This is in my top 10 dishes of life. I order it every time I’m at a Thai restaurant. It’s spicy, savory, and hits the spot every single time. I never thought I’d be able to make edible, much less delicious drunken noodles at home UNTIL I tried out the step-by-step instructions from The Woks of Life. I followed their recipe word for word so you can check it out here. You can make a vegetarian version by omitting the fish sauce and swapping the chicken for tofu.
I made it a second time and accidentally (read: didn’t measure and played it fast and loose with the instructions) added too much fish sauce, which ruined the dish. So don’t do that, just follow the recipe if you’re unfamiliar with the ingredients, cooking methods, or these noodles.
