A classic caprese is a lovely tricolor, tri-flavor situation with tomato, basil, and fresh mozzarella. Out of these, I only had tomato so I used the general formula of tomato, a(n?) herb, and cheese for a twist. The hot pepper jam adds an unexpected sweetness which pairs well with the creamy avocado and peppery arugula.
This sandwich would be even better with deli meat, mushrooms, or grilled chicken. Alas, I either didn't have these or forgot I had them until it was too late.
- 12 inch baguette, cut in half, then sliced lengthwise for 2 sandwiches
- Truffle oil
- 2 tbsp hot pepper jam
- 3 oz grape tomatoes, halved
- 1/4 onion, diced
- 1/2 cup parmesan, shaved into long strips
- 1/2 avocado, sliced lengthwise
- 1 cup arugula
Heat panini maker or grill. Drizzle inside of baguette with truffle oil and place oil side down on grill for 3-4 minutes. Spread hot pepper jam on one side of each sandwich. Top with tomatoes, onion, parmesan, avocado, and arugula. Season with salt and pepper and cover with other baguette slice. Close panini maker and heat through until cheese melts. Serve with tomato soup or something bc why not?
