Veggie cheese stuffing

Please just make this and store it in your refrigerator. It's super versatile - I stuffed it in manicotti for dinner, then made panko-crusted bites the next day as an appetizer. You can also use it as a sandwich/bagel spread or feed it to your dog as an ultra bougie treat like I did.

Ingredients:

  • 8oz jar sundried tomatoes in oil, chopped
  • 10oz frozen spinach (1 package)
  • 16oz cremini mushrooms, chopped
  • Salt
  • Pepper
  • Italian seasoning
  • 1.5 cups ricotta cheese
  • 1.5 cups chihuahua cheese

Prep:

Heat oil from sundried tomato jar in a skillet. Add the tomatoes and spinach, then cook until the spinach thaws and some of the water has evaporated. Add the mushrooms, salt, pepper, and seasoning. Cook until mushrooms are done, remove from heat, and transfer veggie mixture to a bowl. Fold in the ricotta and chihuahua cheeses.

For manicotti, first cook the pasta according to package instructions and spoon the filling into the pasta. Top with your favorite pasta sauce and bake in the oven until cheese melts. For panko crusted bites, shape the mixture into small balls (...yup) and coat in panko bread crumbs. Bake until the panko is golden brown on the outside and the cheese is melted on the inside.
