Caprese sandwich

Does caprese ever get old? No it doesn't. In fact, it's gotten fancier since the first time I made it. This time may be the fanciest yet because I even got some legit baguette to wrap around the red, white, and green.

Here's a pic from one of the many times I've made caprese salad. This image is on my blog business cards, the cover page, and even the "About" page. The fact that it's ubiquitous is likely why I forgot to give it a recipe post of its own. Scroll down for the sandwich recipe!



  • French baguette
  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 2 tsp red pepper flakes
  • 2 tsp Fox point seasoning from Penzeys
  • Fresh mozzarella, sliced
  • Fresh tomato, sliced
  • Fresh basil


Preheat oven to 350F. Cut baguette in half lengthwise and drizzle one slice with balsamic vinegar and a mixture of the oil, red pepper flakes, and Fox Point seasoning. Assemble the sandwiches by placing the tomato, mozzarella, and basil on the other slice. place in the oven open-faced until the cheese starts to melt and the oil and spices are fragrant. Enjoy.
