Finally bought fresh salmon! I planned for salmon sliders with avocado sauce, but the avocados looked sad and and I forgot to pick up the mini bun things. So I made a simple baked salmon instead, this time with a light Asian marinade. Using fresh salmon made a huge difference...the result was a perfectly cooked, seasoned, lightly saucy salmon which was perfect over rice.

- 4 tbsp low sodium soy sauce
- 2 tbsp honey
- 1 inch ginger, grated
- 3 large cloves garlic, grated
- 1 tsp chopped cilantro
- 1.5 lb fresh salmon
Preheat oven to 350F. Combine the soy sauce, honey, ginger, garlic, and cilantro in a bowl. Place the salmon in a lined baking dish and season both sides with salt and pepper. Brushthe sauce on both sides of the salmon and top with 4 small slices of butter. Bake for 25 min (I like when the fish isn't too soft like goo). Serve on top of rice, quinoa, or even tacos.
