So after a first trimester of nausea and avoidance of all things culinary (oh right...baby boy due April 2018!), my interest in the kitchen, cooking, food, and all such related things is back. Thanks to some extra energy too, I've been making myself different kinds of filling breakfasts instead of the usual cinnamon toast crunch and reese's cereals. I made this toast last weekend for my mom and she loved it. I think she now has confidence that I can actually make things and don't starve day to day.
- Potato bread
- Cherry preserves
- Fresh strawberries, thinly sliced
- Fresh blueberries
- Jalapeno cheddar cheese
Toast the bread and spread with cherry preserves. Top with fruit and cheese and drizzle with honey. The tart from the cherry preserves and the heat and creaminess from the cheese are a nice combo. The fresh fruit keeps it light and refreshing so you can def have more than just one.
