Tofu Bibimbap

I can't decide what I love most about this dish: the simplicity, the layered flavors, the mixture of textures, or the vibrant colors. I'm embarrassed that I didn't attempt this sooner. It's been on my list for some time but I didn't have Gochujang, a quintessentially Korean spicy fermented bean paste, in my pantry. I ordered it a few weeks ago and had to use it asap. This recipe is inspired by Jenessa's tofu Bibimbap. Before reading her post, didn't know you could quick-pickle veggies in vinegar or that mustard was an unexpected though delicious addition to a spicy sauce. I will make this again in the coming weeks because it was simple to make and turned out delicious. The only person complaining will be the one doing the dishes - I had a sink full of bowls and spoons after making this and although I didn't do the the dishes, it was worth it! I think... 

Ingredients:

  • 1 medium red onion, sliced
  • 1 cup apple cider vinegar
  • 1 package firm tofu, sliced
  • 2 tbsp thai chili paste
  • 3 tbsp Sriracha
  • 1 inch piece fresh ginger, grated
  • 1 tsp ground mustard
  • 1 tbsp sesame oil
  • 1 cucumber, thinly sliced
  • 2 carrots, thinly sliced
  • 2 tsp honey
  • 3 cups fresh spinach
  • Cooked basmati rice
  • Eggs
  • Gochujang paste

Prep:

Start pickling the onions in apple cider vinegar. Combine the thai chili paste, sriracha, ginger, and mustard to make the tofu sauce. Taste and adjust accordingly. Heat sesame oil in a skillet, Slather the sauce all over the tofu, and sear each side. Add the cucumber and carrots to 2 separate bowls and mix in little bit of the remaining tofu sauce, honey, and a tiny splash of apple cider vinegar to each bowl. Remove the tofu from the skillet and set aside. In the same skillet, cook a couple eggs. I made them sunny side up, but feel free to be as fancy (poached) or basic (everything else) as you like. Assemble the bowls: Add some rice at the bottom and arrange the pickled veggies, spinach, and tofu around the edges. Place the egg in the center and top with a little gochujang paste.
