Spicy coconut curry mushroom pasta

One thing I've learned from cooking regularly for the last 4.5 years is that a sparse fridge = best meals. I didn't expect that half a can of coconut milk, 3 packages of mushrooms, and a handful of seasonings would turn into a crowd (well 3 people including me) pleaser. My initial plan was to reduce the mushrooms + sauce and create a mushroom "sloppy joe" sandwich using pretzel buns. Luckily, the pretzel buns had fungus on them so I swapped the buns for pasta at the last minute...awesome.

Heat olive oil in a large pot or dutch oven and saute the onions. Add the cilantro and garlic and saute for a minute until the garlic is fragrant. Pour in the coconut milk and bring to a simmer, then add the mushrooms along with all the seasonings. Cook until the mushrooms release some of their water, but still have a bite to them. Add the gouda cheese and turn off the heat. Stir in the half and half and keep covered until ready to eat. Cook pasta according to package instructions and add to the sauce. Garnish with cilantro.
