I enjoy summer salads which are light on the greens and heavy on everything else. Here's a simple one that you can put together in no time.
- Raw shrimp, de-veined and tails removed
- Cajun seasoning
- 1/2 inch piece ginger, grated
- 2 garlic cloves, minced
- Juice of 1/2 lime
- 2 tbsp extra virgin olive oil
- 1 tsp honey
- 1/2 cucumber, diced
- 1/2 avocado, diced
- chopped spinach
Cook the shrimp in paprika, cajun seasoning, salt, and pepper. To make the dressing, combine the ginger, garlic, lime juice, olive oil, and honey. Assemble the salad: Add some spinach to the bottom and top with the shrimp, cucumber, avocado, and dressing. If you won't be eating it immediately, add the dressing to the bottom of the container first before assembling the rest of the salad on top.
