Pesto salmon en papillote

I wrote about my dear Baisy a month ago, and today I'm showing you something she helped me create. As always, I was home one night ready to order Dominos and realized I had this goldmine of a pesto sitting in the fridge. 

Ingredients:

  • 2 Salmon fillets
  • 2 tbsp fresh pesto
  • Salt
  • Pepper
  • 1 tsp red pepper flakes
  • 1 tsp coriander powder
  • 1 tsp lemon zest

Prep:

Preheat oven to 350F. Place salmon fillet on aluminum foil and season both sides with salt and pepper. Sprinkle with red pepper flakes, coriander powder, and lemon zest. Spread 1tbsp pesto on top of each fillet, wrap, and bake for 15 minutes. Serve over rice or with a side salad
