Smoky chicken sandwiches

Slowwwwww coookkkerrrrrr!!! Where has this been all my life? Laziness has never paid off in such a delicious way. You don't have to stand in the kitchen stirring, flipping, adjusting the heat, or messing with the food while it cooks. You can actually be productive at other things while the magic happens in the cooker. The steps here are simple. Add all ingredients to the slow cooker. Plug it in, set the timer for the desired time, and forget about it for several hours. Reap the fruits of your "labor". Easy setup, easy cleanup, easy choice for dinner.

Ingredients:

  • 1/4 cup apple cider vinegar
  • 3 tbsp Worcestershire sauce
  • 4 chipotle peppers in adobo sauce
  • 1/4 stick butter
  • 3 tbsp ketchup
  • 2 heaping tbsp plain yogurt
  • 1/4 cup chopped cilantro
  • Garlic salt
  • Pepper
  • 3 large chicken breasts
  • 1/4 purple cabbage, sliced
  • Hamburger bread
  • Gouda cheese slices
  • Arugula
  • Coleslaw
  • 1 Roma tomato, sliced

Prep:

Add the first nine ingredients to a blender to make a sauce. Taste and adjust seasoning to your liking. Place chicken in the slow cooker and pour the sauce over it. Top with cabbage, cover, and cook on high for 4 hours. Pull apart the chicken pieces with a fork. For sandwich assembly, first toast the bread and add a slice of cheese, followed by arugula, coleslaw, a generous helping of the chicken, and tomato.
