Chorizo tacos

As fun as it is to come up with brand new recipes, it's always inspiring to try something out of my comfort zone, to break out of my standard mix of spices and marinades. I find myself looking to Jenessa's blog quite a bit for creative, intensely flavored recipes which are quick and fun to put together. A few weeks ago, she posted a "soyrizo" recipe which I thought would adapt for a ground pork version. I kept some of the spices the same and substituted or left out ingredients I didn't have. They came out fantastic and I'll be making this one over and over again. Thanks Jenessa!

Ingredients:

  • 8oz can chipotle chilis in adobo sauce
  • 3 tbsp tahini paste
  • 1 tbsp vinegar
  • 2 garlic cloves
  • 2 tsp red pepper flakes
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt
  • Pepper
  • 1.5 lbs ground pork (can substitute with beef, chicken, or turkey)

For serving:

  • 1 medium onion, diced
  • 1/3 cup chopped cilantro
  • Flour tortillas
  • Queso fresco cheese
  • Juice of 1 lemon

Prep:

Combine the chipotle peppers, tahini, vinegar, and garlic with all the spices in a food processor. I added about 1/2 cup of water to this mixture since I wanted to have some sauce leftover for the tacos. Add about 1/4 cup of this sauce to the ground pork and mix (but don't over-mix). Cook the pork over medium-low heat in a skillet. Assemble the tacos. Spoon a little of the chipotle sauce down the center of the taco and top with the cooked meat. Garnish with chopped onions and cilantro. Crumble a little cheese over the whole thing and finish it off with a squeeze of fresh lemon juice.
