Pumpkin, Apple, and White Chocolate Pudding

I can't bake. Well I can't be bothered to measure, so I don't bake. I do, however, enjoy something sweet every once in a while. A few weeks ago I pinned a no-bake pumpkin dessert on Pinterest and my mind has been on it ever since. But, I never made it because I assumed it must be more complicated than making chicken, beef, or soup. Well today I finally decided that instead of eating honey out of a small bowl with a spoon, I should take a few extra minutes to make something that sounds, tastes, and looks fancy, but in reality is simple as...pie? Too easy.

Ingredients

(makes 4-5 servings):

  • 1 cup white chocolate chips
  • 1 cup apple cider
  • 1.5 cups pumpkin pie mix (pumpkin puree with spices pre-added)
  • 3 tbsp wildflower honey
  • 1/3 cup cream cheese
  • Cinnamon

Prep:

Add white chocolate chips and apple cider to a bowl and microwave for 1 min. Mush the chocolate chips in the cider and made sure they are softened. Combine the pumpkin puree, honey, and cream cheese in a bowl and stir in the white chocolate/apple cider mix. Add everything to a food processor and mix until it is smooth and creamy in texture. Serve chilled, with a few extra white chocolate chips and a dash of cinnamon to garnish. Sophisticated, no? :)
