Last weekend, I decided to make these sandwiches. I love experimenting with new cheeses, but the veggies I used were pretty safe - I love them in every form, fried, sauteed, in curries, on pizza, etc.
- Potato bread
- 1 8oz package button mushrooms, sliced
- 1 medium onion, diced
- 1.5 cups frozen spinach
- 1 cup roasted red peppers, diced
- Gouda cheese
- Merlot cheese
- 1/4 tsp garam masala
- 1/4 tsp coriander powder
- 2 tsp red pepper flakes
- Olive oil
Heat oil in a skillet and add onions. When they soften, add mushrooms, salt, pepper, garam masala, and coriander powder. Sautee for a bit, then add spinach until it warms through. Meanwhile, shred the gouda and merlot cheeses. Preheat panini maker and place bread on there to crisp it up. Spread the mushroom-spinach veggie mixture on one bread slice, and add the red pepper pieces. Sprinkle liberally with cheese and cover with the other slice of bread. Cover the panini maker and cook until the cheese is melted.
Ufff I am so lazy to set up a proper photo taking station with reflecting boards, appropriate lighting, and such, so my nightime pictures are always so bleh. I really messed up this one, because even though I took 10 pictures, the only clear one was the one I accidentally took with flash (yuck). I might have to make this (or knowing me, a very similar, but not quite exact) sandwich again for a a photo retake. But, you get the idea, this sandwich really has all the stuff I listed under "ingredients" above and it was prettttty yummy.
