I make variations of this sandwich for lunch all the time. It's quick and satisfying (hold the jokes please), and better than boxed Ramen noodles every time.
- 2 eggs
- Handful of arugula
- Goat cheese
- Rustic Italian seasoning
Grab some bread and spread any kind of cheese on it. Stack on your favorite greens (mine's arugula). Cook the eggs and place them on top of the greens. Season with whatever you have on hand. Grill the bread before adding the greens and eggs, if you prefer.
