Cilantro-Chipotle-Onion Burgers and Chutney-Cheese Sandwiches

I have a few recipes I've been meaning to post, but this one is long overdue. I made these burgers and mini sandwiches for hubbs on our one year anniversary in June of this year. The weather was perfect and we had lunch out on our balcony.

Ingredients: Cilantro-chipotle-onion burgers

  • Any kind of burger bread
  • 1 lb ground beef
  • 4 large eggs
  • 1 cup onion, diced
  • 2 chipotle chilis in adobo sauce, diced
  • 1/4 cup chopped cilantro
  • 1 tsp red chili flakes
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • 1 large beefsteak tomato
  • 1 tsp lemon juice
  • salt
  • pepper

Prep: 

Cilantro-chipotle-onion burgers

Cook eggs scrambled style and season with salt, pepper, and lemon juice. Combine everything except the tomato in a large bowl. Form beef patties and cook on the grill (I used my sandwich maker). Place tomato slices and beef patty on sandwich bread. Top with scrambled eggs. That's all.

Ingredients: Chutney-cheese sandwiches

  • Potato bread
  • Hot/sweet mango chutney
  • Few slices of salsa (or any) cheese

Prep: Chutney-cheese sandwiches

These mini salsa cheese and chutney sandwiches are simple to make and really delicious. Cut the edges off the potato bread and spread a hot/sweet mango chutney on one slice. Place a slice of salsa cheese on top of the chutney, cover with the other slice of bread, and serve at room temperature (or grilled if you prefer, but it takes way less time this way).

I also made a

butternut squash soup which I've posted about before

 , but it didn't turn out exactly how I wanted so I cheated and pureed in some cilantro to make it yummy. We washed it all down with some fresh orange juice. Lovely lunch, lovely anniversary :)
