Breakfast Burrito

I made this breakfast burrito for lunch, because I had very few things left in my refrigerator due to slacking at grocery shopping when G was in Australia. That's how this burrito was born.

Ingredients:

  • 2 eggs
  • 1 flour tortilla
  • 1 tbsp chopped cilantro
  • 1/4 cup Mexican blend cheese
  • 1 tsp Chipotle-adobo sauce
  • Drizzle of Sriracha sauce
  • 1/4 tsp paprika
  • Salt
  • Pepper

Prep:

Heat oil a omelette pan thing, mine looks something like this. Beat 2 eggs and add salt, pepper, paprika, and chipotle-adobo sauce to it. Pour into pan and cook one side until it's no longer runny, then close the top of the pan and flip it over to cook the other side. I like this pan because it keeps eggs in a nice round shape and manageable size. Meanwhile, spread some cheese and cilantro on the flour tortilla and microwave for 30 seconds to melt the cheese. Remove egg from pan, cut in half, and place inside the tortilla. Drizzle with Sriracha sauce.
