What would I do without our panini maker?! Thanks to my friends ST and JM for getting it for us for our wedding. I made this grilled cheese sandwich for lunch on some leftover potato bread. Cheese is delicious on its own, but it's so simple to create more elegant flavors with just a couple additional items.
- 4 slices potato bread
- 1/4 medium yellow onion, sliced lengthwise
- 2 tbsp cup chopped cilantro
- 1/2 cup shredded smoked provolone cheese
- 1/2 cup shredded munster cheese
- 1 tsp rustic Italian seasoning
- 1/2 tsp Sriracha sauce
Preheat sandwich maker and place 4 slices of bread on the hot plate. Drizzle Sriracha sauce on one side of the bread and arrange onion slices. Sprinkle with cheeses and cilantro and season with salt, pepper, and rustic Italian seasoning. Cover with the other piece of bread, close sandwich maker, and heat through until cheese is melted. Slice each sandwich in half and serve hot. These are great with a warm soup on the side - I ate them with the black bean soup from Trader Joe's.
