Today I made what could be my favorite dish yet. Last week, Aisha aunty made a yummy spicy shrimp dish among many other delicious things. I asked her for the recipe and modified it for this one for dinner tonight. The nice thing with this shrimp is it's dry, so you can eat it with rice or use it as stuffing for sandwiches or tacos.
- 1.5 lbs deveined shrimp (i bought the frozen kind)
- 3 large cloves garlic, minced
- 1 tbsp red chili powder (yes it was spicy!)
- 1/2 tsp paprika
- 1 tsp black pepper
- 1/4 tsp garam masala
- 1/4 tsp coriander powder
- 1/4 tsp cumin powder
- 1 tbsp olive oil
- 2 tbsp chopped cilantro
- 1tsp salt
- 1/2 cup sweet corn
- 1/2 cup non-fat yogurt
- Flour tortillas
Thaw frozen shrimp and remove shells. Place in a large ziploc bag and add garlic, chili powder, paprika, black pepper, garam masala, coriander powder, cumin powder, and olive oil. Shake well to coat shrimp and marinate in refrigerator for 20-30 minutes. Cook shrimp in a skillet until they are no longer translucent. Season with salt and remove from heat. Transfer shrimp to a bowl and toss with cilantro.
You can eat this shrimp over hot rice, as hubbs did, or eat it in a taco like me. I added corn and non-fat yogurt (As a sour-cream substitute...and it was great...) to my shrimp tacos. No cheese or extra sauce needed, the spices in the shrimp and the cilantro are enough. Mmmmmmmmmmmm!!!
