Indian spiced Ground Chicken Tacos

For our weeknight meals, I like to have a mix of meats, veggies, and 'bases'. Sometimes I'm in the mood for beef, sometimes fish, and other times something vegetarian. We also alternate between grains such as quinoa and rice, and other times prefer noodles or pasta. Lately, I've made a number of sandwiches, as seen herehere, and here.

But I have to say, one of my favorites is when we have taco night. I've made fish and chicken tacos before, and I love experimenting with taco fillings such as the veggies, sauces, and meats. This time, I made a simple, Indian spiced ground chicken taco with some yummy fillings.

Ingredients:

8 flour tortillas

For the chicken filling:

  • 1 lb ground chicken (I used the extra lean kind)
  • 4 large cloves garlic
  • 2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp chopped cilantro
  • salt
  • pepper

For the rest of the filling:

  • 1 can sweet corn
  • 1 can black beans
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded colby jack (or any other) cheese
  • Taco sauce - see recipe
  • 1 tsp lime juice

Prep:

Cook ground chicken in all spices. After cooking, remove from heat and mix in 2 tbsp cilantro for extra flavor. Keep covered until ready to use. Heat tortillas in microwave, 2 at a time for 15-20 seconds. Keep tortillas warm in heat retaining tortilla containers (I just got one last weekend and it works great). Rinse canned corn and black beans and transfer to serving bowls. Slice avocado and immediately sprinkle lime juice on the pieces to keep them from browning. Assemble taco with ground chicken and veggies, then top with cheese and a drizzle of the taco sauce.  These tacos are so simple to make - it took by about 25 minutes start to finish to get dinner ready - and they're healthy, filling, and tasty. No reason not to try them.
