Even back in the day when I baaaarely cooked (so basically May 1985 through July 2011), there was one thing I could put together that was routinely fast and edible (or better) every time - nachos with veggies. On nights when I was too lazy or incompetent to make anything else, I'd make this.
- Spicy Doritos or any kind of tortilla chips
- 1 small tomato, diced
- 1/2 medium onion, diced
- 1 small green chili, minced
- 1 tbsp chopped cilantro
- Any kind of shredded cheese
Arrange chips on a plate. Sprinkle all veggies evenly and top with cheese. Microwave for a minute. Yummy snack in no time.
