I made an onion jam a few weeks ago based on this recipe, and I had leftover soy sauce-honey marinated chicken from my tacos. Hubbs and I were debating whether we should get takeout sushi for lunch or eat at home. We were both a little sick and didn't want to drive or take the train anywhere, so at-home-lunch won.
- A sturdy sandwich bread
- Onion jam
- 2 tomatoes on the vine, sliced
- Shredded mozzarella cheese
- leftover Soy sauce/honey chicken
- 2 tsp red pepper flakes
- a yummy sauce (same sauce I made for my lettuce wraps
- and had leftover)
- handful of fresh basil leaves
- Olive oil
Preheat the sandwich maker. Spray both sides of bread slices with olive oil and place on sandwich maker. Spread onion jam on each slice and top with tomatoes, red pepper flakes, chicken, basil, salt, and pepper. Sprinkle with mozzarella cheese and wait until it melts. Drizzle some of the yummy sauce on top, but not too much to overwhelm the other flavors. We drank a delicious corn and red pepper soup (courtesy of Trader Joe's) to go with these sandwiches.
