Jumbo Shells with a Cilantro-Cheese stuffing

My friend Naz came over for a night of food and basketball. There were 12 games on at once, and Hubbs got us NBA League Pass so we don't have to miss any of the action! All Naz and I did was eat and switch from one game to the next - it was awesome. Here's what I made for dinner.


  • 1 box jumbo pasta shells
  • 1/4 cup softened goat cheese
  • 1/2 cup grated parmigiano reggiano cheese
  • 1/2 cup chopped cilantro
  • 1 tbsp balsamic vinegar
  • 1 tbsp Sriracha sauce
  • 1/2 cup tomato/basil marinara sauce (you can make your own too but I used the bottled kind)
  • 1 egg
  • Salt


Preheat oven to 400 degrees F. Cook pasta according to package instructions. While pasta cooks, add goat cheese, parmigiano reggiano, cilantro, balsamic vinegar, Sriracha sauce, salt, and egg to a bowl and mix well. Remove cooked pasta and scoop cheese mixture into each shell until full. Coat a baking dish with marinara sauce and place shells in dish. Add a small amount of marinara sauce to the top of each shell. Bake for 10 minutes until cheese is ooey and gooey and melty. You can really stuff these shells with anything - I'll try mine Indian style next time, with peas, mushrooms, and paneer.
