Grilled Cheese sandwiches with Prosciutto and Caramelized onions

So far, I've used my panini maker as a grill and never quite like a sandwich maker. Finally used it tonight and it's awesome! P.S, eating a grilled cheese sandwich and watching a Bulls game go very well together :)

Ingredients (serves 4):

  • any kind of sandwich bread
  • 2 medium white onions, sliced lengthwise
  • 3 cloves garlic, minced
  • 2 roma tomatoes, sliced
  • 1/4 cup torn basil leaves
  • 8 wide slices of prosciutto
  • 4 slices pepper jack cheese
  • dash of sriracha sauce
  • 1 tsp sugar
  • salt
  • pepper
  • olive oil spray

Prep: 

Preheat panini maker. Heat olive oil in a skillet and add onions. Cook for 2-3 minutes, then add salt and sugar. Add garlic and pepper and cook for 3-4 minutes. Spray bread slices on both sides with olive oil and place on panini maker. Arrange tomato slices, basil leaves, onion/garlic mix, 2 slices of prosciutto, and 1 slice of pepper jack cheese on each sandwich. Drizzle with sriracha sauce and cover with second slice of bread. Close panini maker lid and press down. Cook for 5-7 minutes until bread is nice and crispy and cheese is melted.
