Veggie omelette

Veggie omelette

What happens when you have a bunch of veggies, but no rice, tortillas, pasta, or bread to serve them with? Umm you put them on an omelette, of course!

Ingredients (for 2):

  • 2 eggs
  • 1 medium yellow onion
  • 1 roma tomato
  • 4 green chilis
  • 2 tbsp cilantro
  • handful of cheese - any kind
  • salt
  • pepper
  • oil

Prep:

Whisk eggs together and add to heated, oiled skillet. Chop all veggies in a food processor. When egg just starts to set, sprinkle veggies. When eggs are almost set, add cheese, salt, and pepper and fold in half. Easiest omelette ever. Kinda looks like a pizza, but it's now.

P.S, has omelette always been spelled as omelette and never as omlet??? I don't think I've ever written or typed out that word and google had to tell me how to spell it correctly. Sad.
