Another easy pasta recipe, made with ingredients I had lying around.
- Any kind of pasta
- 4 roma tomatoes, chopped
- 3 medium yellow onions, sliced lengthwise
- 1 can roasted red peppers in olive oil, diced
- handful of fresh basil, roughly chopped
- 1 tbsp pesto sauce
- 2 tsp spicy red pepper flakes
- goat cheese
Cook pasta according to package instructions. Heat pesto in a pan. Add onions and fry until translucent, then add pesto. Add tomatoes and cook until they soften, then add red peppers. Stir in red pepper flakes and desired amount of goat cheese to make a slightly creamy sauce. Simmer for 5 minutes, then remove from heat and add fresh basil leaves and salt. Mix in pasta and serve hot.
