This afternoon, I found one small packaged piece of salmon hidden away in the depths of my freezer. Not sure how many weeks (or months) it's been there, but there's no way to tell if it's gone bad except by eating it. I made this baked salmon simply, by quickly seasoning it with a few things.
- 1 tsp red chili powder
- 1 tsp dried basil leaves
- Olive oil spray
- Sriracha sauce
Preheat oven to 350 degrees. Cut salmon into cubes. Line a baking tray with aluminum foil and spray tray and salmon with olive oil. Sprinkle salmon pieces with red chili powder, dried basil leaves, and salt. Bake for 10-15 minutes. Serve hot with a dot of Sriracha sauce. Yumm. We'll know if the salmon was spoiled in about 24 hours!
