Avocado salad

We don't eat turkey on thanksgiving. I've never liked turkey - it's bland and doesn't absorb yummy flavors as well as chicken. I'm also not a big fan of mashed potatoes, gravy, beans, or even pie for that matter. So, a few years ago, we started preparing a giant feast on thanksgiving when we got together with family and friends - usually a potluck where everyone made whatever they pleased. Turned out delicious, and we're going to one of these dinners tomorrow evening. For tonight, we (my family and G's family) are eating together. I made my stuffed mushrooms with a few modifications - I used basil instead of parsley, mozzarella instead of feta, and shallots instead of scallions. I also made an avocado salad.

Ingredients:

  • 3 ripe avocados
  • 2 roma tomatoes
  • 3 green chilis
  • 2 small shallots
  • 1/2 cup chopped cilantro
  • 1/2 cup cubed fresh mozzarella
  • 2 tbsp lime juice
  • sea salt
  • black pepper

Prep:

Cut everything up and mix all ingredients together. No cooking necessary.
