The everything-but-the-meat burger

Today was grocery day. My fridge was completely empty (well it didn't have anything interesting or inspiring in it) so I semi-planned out a menu for the week and bought a bunch of stuff. After all that loading and unloading, going from store to store, cleaning the fridge, and putting everything away, I didn't want to spend more than 15 minutes making lunch. Luckily, that's all the time it takes to make this burger.


  • bread: any kind of burger bun
  • 4-5 shallots
  • 1 medium red bell pepper
  • 1 medium eggplant
  • 1 large tomato
  • 1 cup sliced baby portabello mushrooms
  • 2 green chilies (we like things spicy)
  • 1/2 of a medium avocado
  • 2 slices pepper jack cheese
  • Trader Joe's white bean-pesto hummus
  • sea salt, to taste
  • 1/2 tsp sugar


Saute chopped shallots, green chilies, and bell pepper first with salt and a little sugar, then add mushrooms. Cook until bell pepper and mushrooms soften. Grill or broil 1/2 inch slices of eggplant. I don't have a real grill so I used my panini maker instead. Lightly toast insides of bun in a skillet on low heat. Spread white bean-pesto hummus on one side of the burger bun. Arrange eggplant, pepper jack cheese, 1 thick slice of tomato, and veggie mixture on bread. Top with thinly sliced avocado. You can make so many variations of this burger depending on what you have on hand. You could add meat to this burger, but honestly, you don't need it! The veggies are flavorful, so all you need is a little salt and hummus to make this burger pop.

Ohh yea I also used my juicer to make some fresh orange juice to wash down the burger. These oranges weren't that juicy so It took about 4 oranges for this one glass of juice -> worth it.
