Pasta with basil and sun-dried tomatoes

I'm home in Atlanta! I was about to make something for the family gathering we had yesterday, but my parents made a bunch of stuff and it would have been one too many dishes.

Today's pasta turned out well, and it was so, so simple to make. I think the smell from the sauce woke up Vinnie (he usually sleeps until 1, but he was up by noon thanks to the aroma, I like to think).


  • 1 cup whole wheat penne pasta
  • 2 cups farfalle pasta
  • 1 medium red onion
  • 5 cloves garlic
  • 1 green chilli
  • 1/2 cup fresh basil
  • 2 large tomatoes
  • 3/4 cup sun-dried tomatoes
  • 4 tbsp pesto sauce
  • Fresh mozzarella
  • 3 tsp Romano cheese


Chop onions, garlic, and green chilis and add to heated skillet with 3 tsp olive oil. Drain oil from sun-dried tomatoes and add to skillet. When onions turn translucent, add cubed fresh tomato pieces. Add salt to taste and stir occasionally. Cook for 15-20 minutes, and add torn pieces of fresh basil. Cook pasta according to package instructions. Drain pasta and add sauce, fresh mozzarella chunks and romano cheese. You can add as much or as little cheese as you wish. When I make this next, I'll try to find sun-dried tomatoes that aren't packed in oil to reduce some of the greasiness.
