I watched an episode of Bobby Flay last weekend. He's famous for grilling just about anything, and in this episode he grilled some chicken brushed with yummy spiciness. I found another Bobby Flay recipe today, with a sweet and spicy twist.
- 2 boneless, skinless chicken breasts
- 1 medium onion
- 1 tbsp chopped ginger
- 4 cloves garlic
- 1/4 tsp cinnamon
- 1/2 tsp red chili powder
- 2 cloves
- 3 plums, coarsely chopped
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tbsp lime juice
- 1 tbsp sugar
Whole wheat pasta
Tomato/basil bisque (Bought mine readymade from Costco)
Cook pasta and heat tomato basil bisque. I watered down the bisque, added goat cheese, and used it as a sauce for the pasta.
- Mandarin oranges
- Pineapple chunks
- Blend mandarin oranges, pineapple chunks, ice, and milk.
Saute onions, garlic, and ginger until onions are translucent. Add cinnamon and cloves and cook for 3-4 minutes. Add lime juice, soy sauce, honey, sugar, and plums. Cook until sauce thickens. Use a blender to puree the sauce. Marinate chicken in pureed plum sauce for 30 minutes in the refrigerator. Alternatively, you can just brush the chicken with the sauce and grill it right away instead of marinating it. Remove chicken and add to grill (I used my trusted panini maker again). Cook chicken until it's no longer pink.
Serve pasta with sauce and grilled chicken.
I thought the chicken would be overly sweet/ weird tasting with the cinnamon, honey, sugar, and plums, since this sounds more like a recipe for a christmas song than a chicken marinade. But, everything went surprisingly well together, and the red chili powder gave it just the right amount of kick. The result: chicken that tasted like chicken, and not like liquified candy. Success!
