Chicken curry

Aisha aunty makes the best chicken curry. Whether she makes it with boneless chicken breast or with bone-in legs, with spinach or with potatoes, it always turns our delicious. I've tried making my own twice so far - Here's the second attempt.

Ingredients:

  • Boneless, skinless chicken breast
  • 4-5 medium tomatoes
  • 1 tbsp chopped ginger
  • 3 medium onions
  • 6 cloves garlic
  • 1/4 cup chopped cilantro
  • red chili powder
  • 1 dried chili
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • turmeric
  • salt
  • olive oil

Prep:

Cut chicken into cubes. Marinate in olive oil, red chili powder, and turmeric for 30 mins. Blend tomatoes, ginger, onions, and garlic to make a paste. In a large pan, heat olive oil. Add cumin seeds and dried chili. Once cumin seeds start to pop, add garam masala. Add chicken to pan. After 1-2 minutes, add blended paste and salt. Cook at medium heat until chicken is cooked all the way. Add cilantro and cook for an additional 5 minutes. Serve hot over rice or quinoa.
